The season for fresh blueberries is approaching! A perfect partner to a fresh cup of Sasquatch Coffee, this blueberry coffee cake will add a sweet and flavorful start to the day.
Ingredients:
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 cup sugar
- 2 sticks butter or margarine
- 2 eggs
- 1 cup sour cream
- 1 tsp. vanilla
- 1 can blueberry pie filling
Topping:
- 1/2 cup flour
- 3 Tbsp. butter or margarine
- 1/4 cup sugar
- Mix flour, baking powder, baking soda and sugar. Cut in butter as for pie crust. Beat eggs, sour cream and vanilla; add to flour mixture.
- Spread half the batter in a 9×13” greased baking dish. Spoon blueberry pie filling over top. Spread remaining batter over filling and sprinkle with topping. Bake in 350° oven for 40 minutes.
- For Topping: Mix all topping ingredients together in the same manner as the cake, in separate bowl.
