Blueberry Coffee Cake

Sasquatch Coffee_BlueberryThe season for fresh blueberries is approaching! A perfect partner to a fresh cup of Sasquatch Coffee, this blueberry coffee cake will add a sweet and flavorful start to the day.

Ingredients:

    • 2 cups flour
    • 1 tsp. baking powder
    • 1 tsp. baking soda
    • 1 cup sugar
    • 2 sticks butter or margarine
    • 2 eggs
    • 1 cup sour cream
    • 1 tsp. vanilla
    • 1 can blueberry pie filling

Topping:

  • 1/2 cup flour
  • 3 Tbsp. butter or margarine
  • 1/4 cup sugar
  • Mix flour, baking powder, baking soda and sugar. Cut in butter as for pie crust. Beat eggs, sour cream and vanilla; add to flour mixture.
  • Spread half the batter in a 9×13” greased baking dish. Spoon blueberry pie filling over top. Spread remaining batter over filling and sprinkle with topping. Bake in 350° oven for 40 minutes.
  • For Topping: Mix all topping ingredients together in the same manner as the cake, in separate bowl.
