Ingredients
- 3 lb beef roast
- 1½ teaspoons kosher salt
- ¾ teaspoons fresh ground pepper
- 1 tablespoon vegetable oil
- 1 cup vegetable juice V8
- 1 cup brewed coffee
- 2 onions sliced thinly
- 1 teaspoon minced garlic
for the gravy
- ⅓ cup water
- 3 tablespoons cornstarch
- 1 teaspoon salt
Instructions
- Season all sided of beef with salt and pepper. Add vegetable oil to a skillet and place over medium heat. Add beef and brown on both sides, about 5 minutes each.
- Add vegetable juice and coffee to slow cooker. Place browned roast in slow cooker.
- Add onions and garlic to skillet and cook over medium heat until browned, about 5 minutes.
- Layer onions over roast and in cooking liquid. Set slow cooker to low for 6 to 8 hours or on high for 4 hours.
- Remove roast to a serving platter.
For the gravy:
- Strain cooking liquid into a saucepan. Mix cornstarch and water together until smooth. Whisk into cooking liquid and place over medium-high heat. Cook, whisking constantly until mixture comes to a soft boil. Lower to simmer. Season with remaining salt. Serve with roast and mashed potatoes or rice.
