Maple Coffee Brine

Mario Batali from The Chew has provided us yet another way to incorporate coffee in our food. This Maple Coffee Brine is designed for the famous Thanksgiving Turkey Dinner. Of course any poultry is allowed to bathe in this brine before it’s cooked, but with it being November turkeys are in the spotlight. Hope everyone has a Squatch-tastic Thanksgiving this year! Ingredients for Maple Coffee Brine

  • 2 cups Water
  • 12 cups Freshly Brewed Strong Coffee
  • 1 cup Salt
  • 2 cups Maple Syrup
  • 1 gallon Ice Water

Step-by-Step Directions

  1. In a large stock pot, combine the Water, Coffee, Salt, and Maple Syrup. Bring to a boil and stir frequently to be sure Salt is dissolved. Remove from heat and cool to room temperature. When the broth mixture is cool, pour it into a clean 5 gallon bucket. Stir in the ice water.
  2. Place the Turkey, breast down, into the Brine. Make sure that the cavity gets filled. Place the bucket in the refrigerator overnight but no longer than 12 hours.
